CHOCOLATE CHIP ENERGY BITES

Good day there gals and pals.

Hitting you with a snacky snack recipe today.

I feel like I am the healthy snack queen, recipe developer extraordinaire.

A major chunk of my life is dedicated to coming up with new ways to create edible, healthy-ish snacks to keep on hand because we are both snack hounds. Especially Keith!

They all go so quick in our house.


These guys are a quick dopamine boost, but do require refrigeration for the most enjoyable eating experience.

They tend to be quite soft and flatten out a bit (or smoosh together if kept in a baggie) when transporting. Although, they are still delicious no matter how they look.

CHOCOLATE CHIP ENERGY BITES

INGREDIENTS

  • 3/4 cup runny *natural* peanut butter

  • 2 tablespoons flax meal

  • 2 tablespoons protein powder or collagen (I love Four Sigmatic protein and Rootz Nutrition or Vital Proteins collagen)

  • 1/3 cup almond flour

  • 1 tablespoon honey

  • 4 ounces chopped chocolate (I recommend Hu Kitchen or Chocolove)


DIRECTIONS

  1. Chop the chocolate.

  2. Add peanut butter, flax meal, protein powder or collagen, flour and honey to a mixing bowl and mix until combined. It will be a bit difficult to mix; use the back of your spoon and don't add any additional liquid. I promise you will get there.

  3. Add the chocolate chips and use your clean hands to mix them into the "dough".

  4. Roll into bite sized balls and store in an airtight container in the fridge for optimal snacking.

  5. Enjoy!
