PEAR & ROSEMARY GIN FIZZ

WELCOME TO DAY 2 OF DRINK WEEK!!


If you know me, you know that gin is my go to alcoholic beverage of choice.

It isn't strong, goes with everything and is a beautiful component to muddled fruits.

You just can't go wrong.

If I'm mixing a cocktail, 90% it is concentrated around gin.


Today we are whipping up a PEAR AND ROSEMARY GIN FIZZ.

Doesn't that just sound delightful?!


WHAT YOU WILL NEED

  • Cocktail glasses

  • Small plate

  • Cocktail shaker

  • Small pot

  • Parchment paper


FOR INGREDIENTS

  • Rosemary - 2 bunches

  • Pear juice - peel and slice 3 fresh pears, blend them and strain them through a cloth

  • Gin

  • Rosemary simple syrup - 1/2 cup water + 1/2 cup honey + 1 sprig rosemary

  • Sugared rosemary - for garnish

  • Lemon

  • Sparkling water

There are a few steps in this little dandy, but worth it.

Make sure you start a couple hours before you want to enjoy if you decide to add the sugared rosemary (not necessary) as it takes a while to dry. Then toss in granulated sugar until fully coated.

First, add 1/2 cup sugar and 1/4 cup water to a pan, dissolve the sugar over low heat. Do not boil. Toss in rosemary sprigs one at a time to coat, remove and let dry for 2 hours on parchment paper.

Next, make the rosemary infused simple syrup. Combine 1/2 cup honey and 1/2 water in a pan. Bring to a light boil, add one sprig of rosemary and simmer for 2 minutes. Let cool.

Pear juice can be purchased, but there is nothing like fresh juice straight from the pear. Peel and slice 3-4 pears, add them to a food processor or blender and pulverize. Strain the mixture through a sieve or a cloth to remove the pulp.

In a cocktail shaker with ice: add gin, pear juice, lemon juice and simple syrup. Shake to combine and cool. Pour into glass (I don't do this one over ice, but feel free to) and add sparkling water and sugared rosemary. Serve and enjoy!

INGREDIENTS

  • Rosemary, 1 bunch

  • 4 ounces pears juice, fresh is best (see notes) but store bought works too

  • 2 ounces gin

  • 1/2 - 1 teaspoon rosemary simple syrup

  • 1 tablespoon lemon

  • Sparkling water, just a splash

  • Sugared rosemary - for garnish


DIRECTIONS

  1. Prepare the sugared rosemary (optional). *see notes*

  2. In a small saucepan, make the rosemary infused simple syrup by combining 1/2 cup honey and 1/2 cup water. Bring to a very light simmering boil, add one sprig of rosemary and simmer for 2 minutes. Let cool.

  3. If making your own pear juice, peel and slice 2 pears, add them to a food processor or blender and pulverize them. Strain the mixture through a sieve or a cloth removing the pulp (it will be minimal).

  4. In a cocktail shaker with ice, add: gin, pear and lemon juice and simple syrup. Shake to combine and chill. Pour into cocktail glass, add sparkling water and sugared rosemary for garnish.

  5. Serve and enjoy!


NOTES

  • This recipe makes one drink. Adjust as you see fit.

  • For sugared rosemary : add 1/2 cup sugar and 1/4 cup water to a pan, dissolve the sugar over low heat. Do not boil. Toss in rosemary sprigs one at a time to coat, remove and let dry for 2 hours on parchment paper. Then toss in granulated sugar until fully coated.

  • Making your own pear juice is worth the extra step.
