HAMBURGER STROGANOFF

A favorite meal of mine growing up.

A meal that feels like a warm hug. Every single time.

The coziest of comfort foods.

If there is one meal I could go back in time and eat in my mommas kitchens, I would choose this.


& while I would love to share her recipe with you, my digestion says, “we gotta change some of these ingredients up".

So I did just that.

& it’s still cozy.

& it’s still comforting.

& it’s still delicious.

& memoires of home and sitting around the dinner table with those I love still come flooding back.


Food is so healing.

Don’t forget that.


This is a dairy and gluten free recipe but of course feel free to use what you have on hand. I will also give alternatives in the NOTES section.

HAMBURGER STROGANOFF

INGREDIENTS

  • 2# ground beef

  • 1 onion, diced

  • 1# mushrooms, sliced thick

  • 4 cloves garlic, minced

  • 1 cup beef broth (I love Kettle & Fire bone broth)

  • 1 can coconut milk (I love Thai Kitchen) *see notes for alternatives

  • 2 tablespoons lemon juice

  • 2 tablespoons dijon mustard

  • 2 tablespoons arrowroot starch, or cornmeal

  • 1/4 cup nutritional yeast

  • salt and pepper to taste

  • parsley, chives, green onion and/or micro greens for garnish


DIRECTIONS

  1. In a dutch oven, add the hamburger and onions. Brown the hamburger until slightly pink. Drain all but two tablespoons of fat. Add salt and pepper.

  2. Add mushrooms and cook for an additional 10-12 minutes until the mushrooms reduce in size and look a bit caramelized.

  3. Deglaze the pan with a splash of broth and scrape up all the bits from the pan. Flavor, baby!

  4. Create a small well in the middle and add the arrowroot powder to create a slurry. Once thickened, incorporate through the rest of the mixture.

  5. Add coconut milk, lemon juice, nutritional yeast, mustard + more salt and pepper. Simmer for 5-10 minutes.

  6. Serve over noodles of your choice, garnish and enjoy!


NOTES

  • Cashew milk is a great alternative if still wanting to make it dairy free (1/4 cup cashews + 1 cup water, blend).

  • Our favorite noodles are Jovial Brand gluten free noodles.We love using the rotini style for this recipe because all the swirls act as a great vessel for the sauce.

  • This recipe makes great leftovers. Like soup, the flavors really blend and come alive the next day.
